Kiwi Lime Pie – California fusion in a classic tangy dessert

California Kiwi Lime Pie

- 9″ pie

Ingredients

Crust
1/2 macadamia nuts
2 cups coconut flakes
1/2 cup chopped dates
pinch of salt

Filling
1 ripe kiwi
3/4 cup lime juice
1 large avocado
1/2 cup coconut milk
1/2 cup Agave nectar (or more to taste)
1/2 cup coconut butter or coconut oil
3 rounded tsp powdered lecithin
1 tsp vanilla
2 pinches of salt
1 sliced kiwi for garnish

Process:
To make the crust:
- Combine macadamia nuts, coconut flakes, salt and dates in food processor using the “S” blade.
- Process large pieces of nut a coconut flake or broken down and mixture is uniform and smooth.
- Press into pie pan and refrigerate until ready to add filling.

For the Filling:
- Place all ingredients except the lecithin and coconut oil in blender and combine until smooth.
- Add the lecithin powder and coconut oil and blend again.
- Pour mixture into prepared crust and refrigerate for several hours until set.
- Top with coconut whipped cream if desired.

    My friend (Lisa!) made me this pie and brought it over after I gave birth…..and without being over dramatic, I’d like to say that this pie saved my life!! It tasted amazing!!! It was at once a delicate, creamy, tart and sweet treat….but also felt like something nutritious and life-rejuvenating. Hence, I felt like eating nothing but it for the first few days, and kept helping myself to a slice – after 3 am feedings, after dinner, and as mid-morning snacks. I was able to stretch the pie for the whole first week of my baby’s life, and have now vowed to make this for my friend who’s giving birth sometime this week. That’s why I was on here just now, learning how to make it myself, for someone else! I need to spread the joy! Amy, I LOVED this video, and can’t wait to check out the rest and learn each one……..
